Kale, spinach and cabbage provide the raw enzymes that your body needs for nourishment, absorbtion and digestion, and the cooked mushrooms provide a wonderful, smoky flavor and texture.

We love to add avocado to pretty much anything as it provides healthy fats, and a creamy like consistency. You might be suprised to see blueberries added to the list of ingredients, but trust us they work well with the dish, they provide a touch of sweetness and added antioxidant support!

Superfood Salad from The Yoga Girl® Kitchen

Ingredients:

  • 2 tbsp olive oil
  • 1 cup shitake mushrooms
  • 1 bunch asparagus spears, halved
  • 1 pound fresh sugar snap peas
  • 1 clove garlic, minced
  • S & P to taste
  • 1 cup baby spinach
  • 1 cup shredded red cabbage
  • 1 cup shredded kale
  • 1 cup shelled and cooked edamame
  • ½ cup chopped radishes
  • 1 avocado, peeled and cubed
  • ½ cup alfalfa sprouts
  • 1 cup blueberries
  • ½ cup pumpkin seeds
  • Sprinkle of pomegranate and chia seeds (for garnish)

Process:

  1. In a large skillet, heat the olive oil.

  2. Pan-fry the shiitake mushrooms, the asparagus, and the sugar snap peas together with the garlic and salt and pepper. Put aside and let cool.

  3. Mix the remaining vegetables in a big bowl.

  4. Add the blueberries and pumpkin seeds.

  5. Mix everything together with the pan fried vegetables, add the dressing and garnish with pomegranate seeds and chia seeds. Enjoy!
