The Mexican Plate from The Yoga Girl® Kitchen

This simple Mexican inspired dish is the easiest thing to throw together and eat right on the spot, and you can serve it with pretty much whatever you like! We love the Mexican Plate because it's so simple, so nourishing, and so easy to make!

We like the guacamole with a lot of garlic, thick and chunky, so we skip the tomatoes as with traditional recipes.

You can serve your guacamole with chips, chopped veggies, tortilla, on toast, with a side of pico de gallo, or pretty much anything you like!

If you’re serving your plate with chips, remember the chips can already be quite salty, so, don’t go too crazy with the salt. Taste as you go, always!

Avocados don’t last very long, which is why you must enjoy your guacamole immediately. If you end up having leftover’s, we’ve got a little hack for you to keep your guacamole fresh. When you are cutting your avocados always remember to save the pits, and if you set the avocado pits in the guacamole it will last a little longer!

The Ingredients:

  • 1 yellow onion
  • 4 cloves garlic
  • 2 big ripe avocados
  • Juice of ½ lemon
  • S & P to taste

Optional Ingredients to round out your Mexican Plate

  • chopped veggies (we love to use carrot, zuccini, cucumber, bell peppers etc.)
  • tortillas
  • salsa or pico de gallo
  • chips
  • rice and beans (prepped beforehand)
  • toast (optional but we love guac on toast!)

The Process:

Put finely chopped garlic and onion in a medium sized bowl. Add the avocados and squeeze in lemon juice to taste. Mash together (hint: use a potato masher!) season with salt and pepper and eat right away!

Serve with chopped veggies, chips, rice and beans, pico de gallo, tortillas or on toast, the options are endless!
